Recipe “Swinging lard beans“
A very precious ingredient in the economy of peasant families of the past, lard is here used to prepare a good dish of beans soaked in a “Bacchus” IGP red wine by Ciù Ciù Tenimenti Bartolomei winery.
Ingredients:
- 500 g dried borlotti beans
- celery, carrot, onion, chili pepper
- a jar of tomato passata
- 300gr cleaned pork rind
Preparation:
The night before soak the beans in cold water. The next morning drain and cook the beans in salted water with celery, carrots and onions. Once the beans are cooked drain and let cool. Cook pork rind well in unsalted water until soft. Remove from water and allow to cool. Cut pork rind into small pieces, sauté with celery, carrot and onion passed through a blender. Cook about 10 minutes, then douse with white wine and evaporate. Pour the puree over the rinds, cook until flavoured. Finally add the beans and cook for 10 minutes. Serve with grated pecorino cheese, olive oil and toasted bread.
