Recipe “Frascarieje zero waste”
Poor and recovery dishes: the frascarieje. Originally made of rice and white flour only, the frascarieje were one of the many poor dishes of the Marche rural cuisine that today we propose in a modern way by combining them with a Ciù Ciù San Carro red wine.
- 200 gr type 1 flour
- 600 ml cold water
- 8 gr coarse salt
- 50 ml extra virgin olive oil
Bring the salted water to a boil, once it boils, add the flour and mix for about 20 minutes. Once cooked, pour onto a serving dish and add extra virgin olive oil and grated pecorino.
