Ingredients:
- 4 slices of homemade bread
- 4 slices of lard
For the sauce:
- 400g red wine
- 250g vegetable broth
- 3 juniper berries
- 1 bay leaf
- 4 black pepper corns
- 2 teaspoons of sugar
Method:
Bring the wine to a boil and reduce it by half, add the sugar, broth and spices. Boil until reduced by half. Dissolve a teaspoon of cornstarch in a teaspoon of liquid and then put it in the sauce itself. Let it melt then strain to obtain a thick and creamy sauce.
Toast the bread, sear the lard in a non-stick pan. Spread the red wine sauce on the bread, lay the hot lard and top with oil and a sprinkle of pepper.
