Recipe “Boiling hen after fear”
Always, in the memories of grandmothers and mothers, chicken broth ‘is good’, ‘Warms’ and ‘cures’. So what better dish to comfort yourself after a scare? To this great classic of our cuisine we combine a Ciù Ciù Falerio DOP wine.
- 1 hen
- 6 litres of cold water
Put water, vegetables and chicken in a large pot. Bring to a boil and cook over moderate heat for at least an hour. From time to time, remove the grease that surfaces on the water with a skimmer. Once cooked, cut a piece on a serving dish with the herbs.
