‘Ncip e ‘nciap chicken for those who go to “make love”

Ingredients:
- 1 1.5 kg nostrano chicken
- 2 sprigs of rosemary
- 3 cloves of garlic
- pepper
- salt
- chili pepper
- 250gr green olives in brine
Procedure:
Break the chicken into regular pieces. Arrange the chicken with oil, garlic, and rosemary in a large saucepan. Sauté, then add pepper, salt, olives, and fresh chopped chilli pepper. Over moderate heat, let cook for ten minutes; drizzle with white wine until chicken is covered. Put on the lid and cook. When wine is almost all withdrawn, uncover and finish cooking until the meat is browned.
