Recipe “Workers roast chicken”
The consumption of meat was not very frequent in the Marche countryside but certainly, when it was there, roast chicken was the master. To this great classic of our kitchen we combine a Gotico Ciù Ciù red wine (Piceno D.O.P. Superiore), by Ciù Ciù Tenimenti Bartolomei.
Ingredients:
- One free-range chicken
- Two cloves of garlic
- Rosemary
- Salt
- Pepper
- ½ a glass of white wine
- One lemon wedge
Preparation:
The day before cooking, season the chicken with herbs and wine. The following day, preheat the oven to 175° and put the chicken in the oven. While cooking, sprinkle the chicken from time to time with its own juice. Halfway through cooking, add the potato wedges seasoned with unpeeled garlic, oil, salt and rosemary after about thirty minutes. Cook for another 35 minutes.
