Potato and codfish eclipse
Cod with potatoes, a great traditional classic that remained imprinted in the memory of a child on an occasion or event. Discover this new recipe-story combined with a Pecorino Ciù Ciù Merlettaie DOCG.
Ingredients:
- 900gr cod
- potatoes
- cherry tomatoes
- black olives
- carrots
- celery
- ½ glass of white wine
- salt
- oil
Preparation:
Desalt the codfish in running water for at least four hours.
Slice the vegetables and season with oil, salt and white wine. Cook the vegetables for ¾ in the oven at 180° (about 20 minutes).
Drain the salt cod and cut it into slices. Dry the codfish, coat in breadcrumbs and brown in a non-stick frying pan with very hot oil. Brown well until a crust forms. Then put the cod with the vegetables in the oven and bake for 10 minutes at 180°.
