Recipe “Barter of cod”
Cod, the dish of the harvest. Very popular fish dish in the Marche countryside, cod was a typical dish of the harvest period. We offer it in an updated version by combining it with a white wine Pecorino “Merlettaie”, by Ciù Ciù Tenimenti Bartolomei.
Ingredients:
- One clove of unpeeled garlic
- extra virgin olive oil
- 500 gr crushed peeled tomatoes
- 700 gr of dried cod in pieces without skin
- Sprigs of parsley
- One glass of white wine
- Two potatoes
Preparation:
Cut the peeled potatoes into large chunks and boil them until half cooked. In a saucepan, sauté the unpeeled garlic with the crushed parsley sprigs and the oil. Add the peeled tomatoes crushed by hand and a drop of water. Cover with a lid and cook over moderate heat for ten minutes. Put the cod in a small bowl and flavour with oil and white wine. Let it rest for a few minutes. Add the cod and potatoes to the sauce. Cover with a lid again and put back on the heat until the potatoes are cooked. Serve with chopped parsley and a drizzle of raw oil.
